CAVA ECOLÓGICO CYGNUS BRUT NATURE

1+1=3 (D.O.CAVA, D.O.PENEDÉS AND D.O.CATALUNYA)

Harvest  

The harvest is from the end August to beginning October. And the bottled is in March.

The Xarel.lo comes from our vineyard La Pedrera which is 350 meters. Trellis strain.

Parellada comes from our vineyard Ton Cal Llop which is 300 meters. Traditional growing strain.

The Viura comes from our vineyard La Masia which is  216 meters altitude. Traditional growing strain.

Aging  

20 months minimum

Tasting  

Nose: An elegant and fresh sparkling wine with scents of white fruit (ripe grape and apple) combined with pleasant and long lasting toasty aroma from its aging.  

Palate: The palate is an altogether complex, delicate and savoury with a fresh long aftertaste.

 
Gastronomy  

Timbale’of vegetables.

 ‘Escalivada’ (grilled vegetables) with goat cheese.  

Pasta stuffed with ‘crevettes’ served with a soft cream sauce

Meats (poultry, pork…)

Temperature  

Recommended temperature: 6-8ºC
