Elaboration
Destemming, (elimination of the grape stalks or stems before crushing the grapes). Pellicular maceration this is cooling the grape at 8ºC.
Subsequently of the must separation (drawing off and clearing) and slow fermentation at 13ºC (approx) in stainless steel tanks and batonage (3 months).
|
|
Tasting
Nose: Intense, complex, endless of feelings, stone fruits (peach, apricot, medlar) and exotic fruits (mango, passion fruit) combine with delicates orange blossom bouquets.
Palate: Fruity, fresh, a bit mineral, excellent balance. The olfactory sensations are from de mango and peach, rich in shades. Long after-taste.
